Paired with a small amount of animal protein, this salad provides 17g of fat and 3g of carbohydrate.
Ingredients:
3 tablespoons of fresh lemon juice
3 tablespoons of extra-virgin olive oil
1 teaspoon chopped fresh mint
1/4 teaspoon freshly ground black pepper
5 cups butter lettuce (torn or sliced)
1 cup thinly diagonally sliced asparagus
1/2 cup chopped hazelnuts, toasted
1/4 cup shaved pecorino Romano cheese (about 1 ounce)
1/4 teaspoon flake salt (such as Maldon)
Combine lemon juice, oil, mint, and pepper in a bowl, stirring with a wisk.
Place butter lettuce on plates. Top with asparagus, hazelnuts, and cheese. Drizzle vinaigrette over salads, and sprinkle evenly with salt.
Add a small portion of favorite animal protein to boost protein content (around 5 g without added protein source).
